Breakfast Burrito

Ingredients

Siete brand tortillas (I like the Cassava the best) or other brands make egg thins or egg and cauliflower wraps
3 eggs (organic Pasture Raised)
2 Tablespoons of salsa
1/2 an avocado
1 Tablespoon of Coconut oil
Salt
Pepper

Preparation

-Add coconut oil to a pan and preheat on medium heat
-Cut open avocado, remove the pit with a spoon, and scoop out avocado flesh
-Crack eggs in mixing bowl and whisk with fork
-Add egg mixture to pan
-Stir continuously with spatula until scrambled
-If desired, heat up siete wrap in separate pan with a little coconut oil and sea salt for a minute or so on each side
-Add salt and pepper to taste
-Add eggs to center of tortilla
-Add salsa and avocado
-Eat taco style or burrito style and enjoy!
