Healthy Homemade Veggie Hummus Plate

Ingredients

Hummus:
*if you don’t have time to make it, you can purchase hummus. Look for no harmful oils on the ingredient list. *
30 oz of chickpeas (non bpa liner if bought in a can)
1/3 cup of chickpea liquid saved from can of chickpeas
1/2 cup tahini
1/4 cup olive oil
2 lemons juiced
2 garlic cloves
1 tsp cumin
1/2 tsp salt
paprika
fresh parsley

Vegetables:
celery
carrots
sweet mini peppers
greek olives
cherry tomatoes
cucumbers

Preparation

-chop vegetables for dipping
-Add ingredients to high powered blender such as a vitamin, blendtec or food processor and make sure lid is on.
-Turn on high for 30 seconds or more depending on desired texture. If your blender has a tamper, you can use that to mix top and bottom, or take lid off and use a -spoon and replace lid to continue blending.
-For a smoother less thick consistency add more chickpea juice or water
-Garnish with paprika, fresh parsley and greek olives, and another drizzle of olive oil
