Paleo Granola with Vanilla Almond Milk and Fresh Fruit

Granola. Granola with milk and berries on the table.

Ingredients

Paleo Granola (If you don’t want to make it, you can purchase approved ready made paleo granola from brands like julies, purely elizabeth, paleo krunch etc…)
1/4 cup raw almonds
1/4 cup raw cashews
1/4 cup raw pumpkin seeds (pepitas)
1/4 cup raw sunflower seeds
1/4 cup unsweetened coconut flakes
1/4 cup pistachios (shelled)
1/4 cup raw walnuts
1/4 cup raw pecans
1/3 cup coconut oil
4 Tablespoons honey
1 Tablespoon ground cinnamon
2 teaspoons pure vanilla extract
1/2 teaspoon sea salt
1/4 cup dried cranberries
*if you’d like you can add things like flax, chia, and hemp hearts, this is optional*
8 oz of vanilla almond milk
Fresh fruit such as fresh berries, fresh figs, shaved coconut etc…

Preparation

-preheat oven to 300
-add nuts and seeds in a food processor or blender and chop into small pieces being careful not to overland
-in a large saucepan heat coconut oil, honey cinnamon and salt over medium heat for 3-5 minutes
-remove from heat and stir in vanilla
-add nuts and seeds and coconut flakes to pan and stir to coat in mixture
-line a baking sheet with parchment paper and spread granola mixture evenly on pan
-bake for 15-20 minutes or until color reaches a light golden brown.
-remove from oven and add dried cranberries
-Allow to cool until hardened and break granola apart for storage for up to 2 weeks
-Enjoy by itself, on top of non dairy yogurt and ice-cream, or add milk and eat it like cereal!
