wild caught shrimp- 8-12 per person, peeled and deveined, thoroughly rinsed
wild caught sea scallops- depending on the size 4 or 5 per person, unless its the baby scallops, then maybe more
white wine ( i prefer riesling)
Ghee (a type of clarified butter in a glass jar) or coconut oil or avocado oil
minced garlic
scallions
cherry tomatoes (cut in half length wise)
fresh basil
zucchini noodles (can buy pre spiraled or buy a doodlers and do it yourself)
Preparation
-add zucchini noodles to the pan with minced garlic, scallions cherry tomatoes, and chopped basil
-add in a few splashes of white whine and 2 tablespoons of ghee or other healthy oil
-season with sea salt, pepper, and any other seasonings you enjoy
-with a few minutes left, add in shrimp and scallops
-shrimp should be pink, and firm throughout with no translucency
-scallops should turn a bit whiter and not be translucent
