Homemade Healthy Sweet Potato Hash

Ingredients

1 bag froze cubed sweet potatoes (or could buy whole and chop yourself)
1 bell Pepper
1 onion
Avocado oil, coconut or olive oil
Eggs
Salt
Pepper
Garlic Powder
Onion Powder
Paprika
*optional cayenne*

Preparation

-Preheat oil in large pan on medium heat
-Cut up veggies
-Add potatoes and sauté till half cooked
-Add onions and peppers
-Continue cooking till cooked through seasoning as you go
-*optional-I like to smash everything firmly together with the spatula till it resembles a large hash brown*
-Remove from pan and add 2-3 eggs per person
-cook eggs to your liking, I really like over easy because the rich velvety egg yolk is a wonderful combination with the hash
-*you could add breakfast sausage to the hash as well*
