Sweet Potato Fries with Garlic Lime Aioli Dipping Sauce

Ingredients
Garlic Lime Aioli:
3/4 cup avocado oil based mayonnaise
2 TBSP Fresh Lime Juice
1 tsp finely grated lime rind
1 teaspoon minced garlic
A few dashes of the following seasonings to taste:
Chile Powder
Paprika
Black Pepper
Sea salt
Red Pepper flakes
Cayenne Pepper
*optional- one Table Spoon truffle oil or truffle oil mixed with olive oil- a few
*optional to garnish with fresh chopped Parsley or cilantro
Sweet Potato Fries:
2-3 Large Organic Sweet Potatoes
1/3 cup olive oil
2 Tablespoons coconut sugar
1/2 teaspoon Salt
1/4 teaspoon black pepper
1/4 teaspoon chile powder
1/8 teaspoon cayenne pepper
Preparation
Aioli:
-Grate limb zest
-Cut lime into quarters for easy juicing
-Add all ingredients into a bowl and squeeze 2 TBSP worth of lime juice into it and stir well
-Season to taste
-enjoy!
Sweet Potato fries:
-Preheat oven to 450
-Cover baking sheets with parchment paper for easy clean up
-Using a large chef’s knife, cut potatoes into fry size pieces the length of the potato. I usually cut it length wise into slices, then lay the slices flat and continue cutting them length wise into less thick slices
-Throw fries into gallon size ziplock back with olive oil, coconut sugar and seasonings
-Shake thoroughly until evenly coated
-lay out flat on baking sheets, usually takes 2 sheets being sure no fries are on top of each other
-bake for 8 minutes, pull them out and flip them
-bake for another 8 minutes (these times are approximate as the size and thickness of the fries and individual ovens will vary the needed time
-pull out of the oven and pair them with your favorite dip and enjoy!
