Homemade Warm Creamy Tuscan Soup

Ingredients

Chopped Celery (organic) (up to a full bag)
Chopped Carrots (organic) (up to a full bag)
1 Container of mixed greens such as spring mix, or baby spinach and arugala
1 large Onion
Fresh Basil
Bone Broth (1 Carton)
Kidney Beans (1 can)
White Beans (1 can)
Chopped Bacon (half pack)
Johnsonville mild Italian ground Sausage (one of the few options without corn syrup solids)
Mushrooms
Red Potatoes or Multi-Colored fingerlings (1-2) pounds
1 can of coconut milk (organic) * optional
1 Bag froze riced cauliflower *optional
1-3 Tablespoons of minced garlic

The following spices to taste:
Sea Salt
Cayenne Pepper
Black Pepper
Garlic powder
Onion Powder
Red Pepper Flakes
Italian Seasoning (Basil, Thyme, rosemary)

Preparation

-Chop celery, carrots, onions and potatoes
-In your largest pot, boil chopped celery, onions, potatoes and carrots in bone broth
-In a separate pan put in half a pack of chopped bacon and Johnsonville mild Italian sausage (not the brat kind because they add corn syrup, it should just be the ground meat package) and brown
-When finished cooking, add to pot of boiling vegetable
-Add in mixed greens
-Add in riced cauliflower
-Add in cans of beans
-Add in frozen riced cauliflower
-You can add mushrooms if desired.
-Add in desired amount of minced garlic, i suggest 1 to 3 Tablespoons
-Season to taste
(You will need to continue to add some water as it boils off and add tons of seasoning to taste. This makes enough food for 2 people to eat off of for 3 to 4 days.)
-Enjoy!
