Ingredients

1 pound of Bison
1 pound of pork sausage (optional)
1 can kidney beans
1 can of black beans
1 chopped onion
1 28 to 32 oz can crushed tomatoes
2 6 oz cans tomato paste
minced garlic
1 carton of mushrooms
1 32 oz carton of bone broth

The following spices are an approximate starting point, season to taste:
1 TBSP chili powder
1 tsp ground cumin
1/4 tsp cayenne pepper
1/4 tsp garlic powder
1/2 tsp onion powder
1/4 tsp red pepper flakes
1 tsp salt
1/4 tsp ground pepper

Preparation

Brown 1 lbs. bison (can also add 1 lb. of pork sausage ( I like bass farms) in pan on the stove-

in a large pot, add 1 can kidney beans, 1 can black beans, chile seasoning packet, chopped onion, 1 can crushed tomatoes, 2 cans of tomato paste, minced garlic, and cut up a carton of mushrooms- carton of bone broth.

Add spices to taste.

You may need to add a few cups of water during the cooking process so it doesn’t dry out and burn.

Cook simultaneously and when meat is done, add to chile pot. Let simmer together for 15 minutes seasoning to taste.

Optional add ons include chopped green onions, eggs over easy, franks red hot sauce, and using plain greek yogurt in place of sour cream.
