Scrambled Eggs with Salsa and Avocado

Scrambled egg in frying pan close

Ingredients

3 Medium to Large Eggs (organic pasture raised if available)
2 Table Spoons of Salsa
1/2 to a whole Avocado
1 Teaspoon of Coconut Oil

Preparation

-Cut avocado in half
-Remove pit with spoon (there is an entire web site dedicated to people cutting their hand using a knife to remove the pit so I recommend using the spoon)
-Add 1 teaspoon of coconut oil to the pan and turn burner on medium
-Crack 3 eggs into a bowl and scramble with fork
-Pour eggs mixture into pan being sure to continuously stir with spatula
-When it begins to harden add salsa
-continue to stir to desired
-Add Salt and pepper to desired taste
