-preheat oven to 450 degrees
-Chop up Red potatoes into bite sized pieces and mix in bowl with olive oil, sea salt, pepper, and other desired seasonings so they are evenly coated.
-Place a piece of parchment paper on a baking sheet and spread out potatoes. Place in the oven for 25 to 30 minutes. Bake times will vary depending on your oven so feel free to check in on them a few times after the 20 minute mark until desired doneness (usually when a fork easily passes through the potato)
-With 15 or so minute remaining of cook time for the potatoes, start seasoned organic chicken thighs or breasts with sea salt, pepper, garlic, fresh rosemary and other desired seasonings in a pan with some olive oil and squeeze a lemon on top if desired, and cook covered on medium heat, flipping when exterior becomes cooked and crispy. It usually takes around 14 minutes.
-Once the chicken starts cooking, In separate pan, Sauté Broccolini (with 1/3rd of the end chopped off and discarded) in olive oil on medium heat tossing frequently until browned and bright green (around 5 minutes. Add salt, minced garlic if desired and water. Cook until water is evaporated and broccolini is soft, usually another 5 minutes
