A few handfuls of mixed greens
6-10 oz of favorite protein (organic chicken, grass-fed steak, wild caught shrimp and fish) *For a quick option, use a rotisserie chicken
1/2 an apple
1 handful of walnuts
1 to 2 stalks of celery
1 to 2 carrots or a small handful of baby carrots
2 Tablespoons of goat cheese or goat cheese crumbles
2 Tablespoons of olive oil
2 Tablespoons of balsamic, and or apple cider vinegar
1 teaspoon of honey
1/2 teaspoon of minced garlic
A few dashes of your favorite spices such as (sea salt, red pepper flakes, garlic powder, onion powder, black pepper)
Preparation
-Place a few handfuls of mixed greens in a bowl
-chop apple, carrots, and celery and add to bowl
-In a small bowl, add olive oil, vinegar, honey, minced garlic and spices. Blend together with a fork
-Drizzle dressing over salad
-Add protein, goat cheese and walnuts
-Stir and enjoy
